Honours Project on Sea Mullet Mugil cephalus
Factors such as Age, Sex and Weight were examined to see if there is significant differences in selenium concentrations. Concentrations within tissues were analysed
on a Graphite furnace and also work on the speciation of selenium in the tissues will be carried out. By examining this fish it can be determined if Lake Macquarie is
polluted by selenium and if the levels exceed the NHMRC guidelines for metal concentrations in estuaries throughout Australia. It also gives an indication of levels of
Se that humans are consuming from the eating of fish from Lake Macquarie. [eng]

Surimi gels from striped mullet (Mugil cephalus)
Shear stress varied over a wide range (26-100 Kpa) meanwhile shear strain varied within the narrow range 1.35-0.67. The most favorable conditions
were defined by intermediate values of temperature (35şC) and the high value of time (5 h) obtaining values of 100 kPa and 1.35 for shear stress and shear strain,
respectively. The value of shear stress obtained in this work compares very well with those reported in the literature. [eng]
